An industrially applicable process for the manufacturing of a molasses product having improved drying properties, which is characterized in that a starting molasses is ultrafiltrated through an inert membrane having a cut off value of at least 2,000 dalton under such conditions that the fraction maintained as a retentate attains a colour of at least twice the colour of the starting molasses measured according to ICUMSA. The molasses product obtained by this can be spray-dried to a dry molasses or used for the production of a free-flowing brown sugar.
