Method of and apparatus for processing, sterilising and packaging solid food in which a food portion (10) is held in a saline solution contained in an enclosure formed by a packaging film (16, 16a), the food portion is processed and sterilised by ohmic heating, which also sterilises the inside surface of the film, and after processing the enclosure is collapsed around the food portion and resealed as an encapsulation around it, thus producing a sterilised package.
