发明名称 FRACTIONATION OF FATS AND OILS AND EMULSIFIER THEREFOR
摘要 PURPOSE:To provide the subject emulsifier composed mainly of a sucrose fatty acid polyester containing palmitic acid as the main constituting fatty acid and exhibiting a specified average substitution degree, capable of uniformly forming fine and rigid crystals and remarkably promoting fractionation of fats and oils and improved in productivity. CONSTITUTION:An emulsifier for fractionation of fats and oils is prepared by using a sucrose fatty acid polyester (e.g. sucrose palmitic acid polyester) containing palmitic acid as the main constituting fatty acid and exhibiting 4 to 8 average substitution degree as the main agent. This emulsifier for fractionation of fats and oils is then added to fats and oils (e.g. palm oil) in an amount of 0.1 to 3wt.% based on the fats and oils and the resultant mixture is heated and melted at 80 deg.C. The molten mixture is subsequently transferred to a constant temperature of 50 deg.C water bath and the temperature of water in the water bath is lowered 15 deg.C water temperature, the water bath is kept for 20min so as to form fine and rigid crystals of a specified component of the fats and oils. The resultant crystals are then filtered through a filter paper under vacuum to remarkably promote fractionation of the fats and oils. Thus, the objective useful fats and oils can be obtained with an excellent productivity at a low cost.
