PURPOSE:To improve the quality of fish roes by imparting a viscosity to a roe liquid or increasing the viscosity of the roe liquid and increasing the strengths of the membranes of the fish roes, when the fresh or frozen fish roe liquid is not viscous or insufficiently viscous or when the mechanical strengths of the roe membranes are interior, and further to improve the quality of the fish roes by thinning the membranes of the fish roes, increasing the strengths of the thinned roe membranes, and smoothing the rough surfaces of the membranes, when the membranes of the fish roes are thick and hard. CONSTITUTION:Fish roes are treated with a treating solution containing a small amount of a phosphate salt, tannic acid or their mixture or with a treating solution produced by further adding a small amount of a protease to the first treating solution at a low temperature of <=25 deg.C. |
