Methods and apparatus for analyzing an ultrasonic image of an animal or carcass

The method involves recognizing muscle interfaces of an animal or carcass from an ultrasonic image of a muscle area1 determining marbling scores of a muscle of an animal or carcass from an ultrasonic image of the muscle and detecting an outline of a muscle from an ultrasonic image of an animal or carcass. A computer is programmed to analyse the image to perform the above functions. Fig. 2 shows the processing steps required to perform the recognition function while Fig. 4 (not shown) details the steps required to perform the marbling scores determination.
