<p>The invention relates to a process for removing β-cyclodextrin from egg yolk or egg yolk plasma using an α-amylase. This process is characterized in that the egg yolk or egg yolk plasma is treated with a maltogenic α-amylase originating from Bacillus stearothermophilus. The β-cyclodextrin was incorporated into the egg yolk during a cholesterol extraction step. The invention further relates to egg yolk or egg yolk plasma obtained by the use of this process.</p> |
