LOW-MOLECULAR PECTINIC ACID-CONTAINING DIET

摘要

PURPOSE:To prepare a low-molecular pectinic acid-containing diet containing a low-molecular pectinic acid exhibiting a low viscosity and a high solubility without loosing the biological activity as an edible fiber. CONSTITUTION:A low-molecular pectinic acid-containing diet containing 0.01 to 50wt.% low-molecular pectinic acid obtained by allowing end-form polygalacturonase to act on pectinic acid.
