PURPOSE:To substantially reduce the water content, to easily produce a high- quality dehydrated article without deteriorating the quality and to stably maintain the servie life of the commercial products over a long period by using a dehydrating agent with anhydrous trehalose as the effective component. CONSTITUTION:This dehydrating agent contains anhydrous trehalose as the essential component. A material contg. water is efficiently dehydrated by this agent, moreover the dehydrated article is extremely stable, hence the agent is widely used. Namely, the anhydrous trehalose is incorporated into the water- contg. food, medicine, etc., and converted to hydrous trehalose crystal, hence a large amt. of water is collected by the anhydrous trehalose. Since the anhydrous trehalose acts as an extremely effective dehydrating agent and is widely used even for an acidic water-contg. material, high-quality dehydrated food, high-activity stable dehydrated medicine, etc., are easily produced. |
