<p>In a butchery process a carcass (1) is cut into primal joints (3,4,5) along one or more cut lines (B-B,C-C). A cut is made skin-deep only, along at least one of the cut lines (B-B,C-C) from the skin side of the carcass. Skin is stripped from a primal joint (4) on one side of the cut line (B-B,C-C) while leaving skin on a primal joint (3,5) on the other side of the cut line (B-B,C-C). These primal joints (3,4,5) are then separated by a further cut along the cut line (B-B,C-C). The process may be applied to the preparation of a skinned chop primal joint (4) and a belly primal joint (5) with the skin left intact. The process is preferably automated. <IMAGE></p> |
