发明名称 PRODUCTION OF JAPANESE APRICOT ESSENCE
摘要 PURPOSE:To obtain a sufficient amount of UME essence from its fruits through a relatively simple process in a shortened time, by freezing UME fruits and extracting the essence after heating the frozen fruits. CONSTITUTION:UME fruits are frozen by storing them in a commercial refrigerator at -15 deg.C for 5 to 10 days. Then, the frozen fruits are slowly warmed with a low calorie heat without boiling so that the heat may reach the core and the essence is extracted. In order to attain further improvement in the storability and utility, the essence is allowed to stand at room temperature for more than 12 hours, then heated again, while sugar is added to the essence.
