PURPOSE:To obtain a low-alcohol SAKE having excellent fragrance and flavor by feeding SAKE lees to a heating drum under reduced pressure, condensing an evaporated alcohol and an evaporated ester components and adding the condensed components to unrefined SAKE. CONSTITUTION:SAKE lees separated in a production process of SAKE and the like are fed to a revolving drum 12, the drum is evacuated while heating the wall face of the drum, an alcohol and an ester components are evaporated at low temperature under low pressure and condensed by a condenser 22. The liquefied alcohol and ester components are added to unrefined SAKE or the like and then SAKE lees are separated. The prepared low-alcohol SAKE maintains flavor and fragrance even by water addition. |
