PURPOSE:To prepare a fish and shellfish extract by removing heavy metals, thereby suppressing the pollution source and expanding the utilization of resources. CONSTITUTION:The fish and shellfish extract free from heavy metal is produced by treating a fish and shellfish extract containing (A) a peptide forming a complex with heavy metal and produced by digesting raw fish and shellfish or digesting processed residue of fish and shellfish with a proper amount of an acid or a proper amount of protease and purifying the obtained fermented digestion product, (B) a peptide forming a complex with heavy metal existing in a fish and shellfish extract and obtained by passing a fish and shellfish extract containing a bonded undecomposed protein through an ultrafiltration membrane or (C) an undecomposed protein bonded to heavy metal with an ultrafiltration membrane apparatus under pressure, thereby inhibiting the permeation of the peptide forming a complex with heavy metal or the undecomposed protein bonded to heavy metal and existing in the fish and shellfish extract through the ultrafiltration membrane. |
