In making a hard, semi-crystalline, free-flowing dextrose product, which readily dissolves in water, is stable as regards its content of beta-dextrose and contains 85 to 95% by weight of dextrose, 15 to 5% of soluble polysaccharides and not more than 4% of water, an aqueous starch hydrolysate is equilibrated at a temperature over 50 DEG C., heated and dried, e.g. at a temperature between 50 and 100 DEG C., in the presence of moving crystalline or semi-crystalline dextrose and cooled rapidly to a temperature not exceeding 35 DEG C. The hydrolysate may comprise enzyme- or acid-converted starch, e.g. it may be corn syrup. The dextrose in the product may comprise between 40 and 55% of beta-dextrose. The starch hydrolysate may be sprayed on to a preformed dextrose product as it is tumbled or cascaded in an inclined rotating drum-dryer and moved therein with or against a current of hot air. Alternatively, a heavily nucleated starch hydrolysate may be spray-dried. Specification 300,698 is referred to. |
