PURPOSE:To obtain a milky acidic drink excellent in keeping quality regardless of an additional amount of saccharides and having low calorie by acidifying skim milk by the addition of an acid and subjecting the acidified skim milk to homogenizing treatment. CONSTITUTION:An acid such as lactic acid is added to a skim milk to acidify the skim milk, preferably to pH 3.3 to 3.8. Then, the acidified skim milk is subjected to homogenization using a homogenizing, etc., so that skim milk solid content of the final product is pref, 0.6-3wt.% to provide the objective drink. Furthermore, saccharides can be added to the skim milk, as necessary, before adding the acid, but additional amount of the saccharides are restricted to be preferably <15wt.% based on total amount of the skim milk and saccharide. |
