PURPOSE:To prepare a soybean food such as fermented soybean, bean curd and boiled bean having healthiness and unique delicious taste and flavor by half-roasting soybean and processing with hot water. CONSTITUTION:Soybean is imparted with fragrant flavor by half-roasting soybean preferably after washing with water to soak the soybean with water. The half-roasted soybean is processed with hot water to impregnate the hot water through the half-roasted surface layer into the core part of the bean to effect the sterilization and the denaturation of the soybean. The denaturated soybean is e.g. fermented with Bacillus natto to form NATTO (fermented soybean) or ground and processed to obtain bean curd. The half-roasting of soybean is carried out preferably by far-infrared heating at 100-200 deg.C for several seconds to 10min until the surface is burnt brown. The hot-water processing is preferably carried out under pressure to shorten the processing time. |
