摘要 Bakery fermentation cabinet in which the required fermentation time is controlled by a timer (7) which switches on a refrigeration unit (1) at the end of its cycle. The timer (7), when supplied via the prim. timer (6) at the end of its cycle, i.e. after inhibition period, supplies the thermostat (8) which closes the contacts (9) of the heating unit. At the end of the timer (7) cycle, the winding of the conditioning thermostat (10) is excited, closing the contacts (4) of the refrigeration unit. USE/ADVANTAGE - Appts. provides control of start and finish times of bakery fermentation. Avoids quality problems due to delay between end of fermentation and transfer to oven.
