The subject of the present invention is a process for the preparation of crisp reconstituted pieces of potato. The process consists in preparing a paste by mixing fresh mashed potato, flakes or broken flakes of potato and starch, in extruding and in rolling the paste in order to form at least one strip, in using the said strip of paste to form pieces of any geometrical shape, and in frying these pieces. |
