摘要 PURPOSE:To obtain a method for producing a cooked rice improver, capable of providing tasty cooked rice, good in keeping quality and luster without deteriorating the taste even on the next day and causing the stickiness even from the conventional cooked rice, eliminating the malodor of an agricultural chemical ingredient from the finished cooked rice and tastily edible without caring about the malodor of the agricultural chemical during the meal, the cooked rice improver and a method for improving the cooked rice. CONSTITUTION:This method for producing a cooked rice improver is to place 1000 pts.wt. rice in a rotating drum, add 100 pts.wt. improved water, prepared by treating 100 pts.wt. water with salt and oyster shell at an ultrahigh temperature of about 1200 deg.C, finely powdering the salt and oyster shell in a vacuum in a vacuum tank and composed of the oyster shell and vitamin E thereto while rotating the rice, mix them and dry the resultant mixture at ordinary temperature of <=45 deg.C for several hr by passing a wind therethrough. Furthermore, the cooked rice improver obtained by this method for the production thereof and a method for improving cooked rice using this cooked rice improver are provided.
