摘要 Preservation of soybean sauce is improved by using garlic extracts. A soybean sauce is prepd. by adding garlic extracts into soybean sauce. The extracting of garlic comprises (a) adding ethanol to sliced garlic and adding edible salt solution, ascorbic acid or citric acid in some cases, (b) filtering the mixture after 2 hours to obtain the final product. The soybean sauce can be preserved for a long period.
