Process which comprises the use of a pressure panel equipped with a seal F of elastic material, with a tab E and lugs D, which seal - through contact with the edge C of the pressure panel B and with the cover A - seals the panel. After placing of the cover and the seal, the panel, when heated, lifts the former against the body of the latter because of the increase in pressure of the vapour contained inside the panel which is sealed, in the initial stage of heating, by the tab of the seal and by the cover. Baking takes place with the cover in this raised position, in which position it is held until cooling of the panel occurs or the release of the vapour is caused by means of the actuation of a valve, at which point the cover descends again, then allowing removal of the seal and of the cover, facilitating access to the foods. <IMAGE>
