PURPOSE:To obtain noodles, having moderate hardness, rich in viscoelasticity, having springiness and good in crispiness by kneading a raw material under a reduced pressure and simultaneously including fats and oils and a lipase in the raw material, etc. CONSTITUTION:A raw material is kneaded under a pressure of >=360mmHg (especially preferably <=160mmHg) and 0.5-2wt.% (preferably 0.8-1.3wt.%) fats and oils and 50-200 units (preferably 80-150 unit) lipase are included in the raw material or the surface of a noodle sheet or noodle strips obtained from a dough after the kneading is treated with the fats and oils and a lipase to afford the objective noodles. |
