PURPOSE:To produce a high-quality bean curd for retorting or freezing. CONSTITUTION:Dextrin or starch or both are added to soybean milk produced according to a conventional method and a coagulating agent is then added to coagulate the soybean milk to produce bean curd. In the process, the soybean milk after adding an additive thereto is subjected to the deaeration treatment. Thereby, bean curd at the same level as that before the treatment is obtained even by high-temperature pressurizing sterilization treatment or freezing treatment. |
