PURPOSE:To provide a rice cooking water having composition capable of keeping freeze-preserved 'sushi' takable without the need for reheating after thawing. CONSTITUTION:The mineral solution is prepared by the following process: 10-20ppm of ferric ion is added to an aqueous solution containing 10-12.5wt.% of carbonates of alkali and alkaline earth metals mixed so as to be (3:1:1) in the molar ratio of Ca:Mg:K followed by adding acetic acid to the solution to adjust its pH to 3.0-4.5; the resulting basic mineral solution is diluted and incorporated with pectin, peptone and a calcium carbonate-saccharide baked product followed by sterilization to prepare a medium; an yeast is then cultured in this medium and the resultant microbe bodies are eliminated. rice is cooked using this mineral solution. The resultant boiled rice is increased in apparent volume at ca.20% and also improved in sustained quality. Besides, this boiled rice can be processed into 'sushi' which is then preserved in a frozen state, and this freeze-preserved 'sushi' retains such good taste as to be directly takable after thawing. |
