A sprayable fondant (I) contains 45-80 wt.% sugar and/or disaccharide alcohol. (I) pref. contains 45-75 (45-65) wt.% sugar and/or disaccharide alcohol and less than 10 (1) wt.% stabiliser, pref. a protective colloid, e.g. an alginate. (I) are pref. prepd. by adding to the non-sprayable sugar and/or disaccharide alcohol-contg. fondant a thinning agent contg. at least one substance from sugar, disaccharide alcohol or stabiliser. The thinning agent is pref. an aq. formulation contg. up to ca. 70wt.% sugar and/or disaccharide alcohol pref. contains a stabiliser (e.g. a protective colloid) opt. in the presence of sugar and/or disaccharide alcohol. USE/ADVANTAGE - Useful for glazing tarts, filling pralines and preparing confectionery. (I) is sprayable whilst retaining its fondant character.
