PURPOSE:To uniformize grain size and improve palatability of cereal flakes, by heating creal grains with twin-screw extruder under pressure, extruding under normal pressure under a condition to inhibit the expansion of the extrudate, pressing the obtained granules and thermally expanding the pressed granules. CONSTITUTION:Cereal grains such as wheat, corn, rice, soybean, milo, etc., or their crushed products are adjusted to a water-content of 10-50wt%. The conditioned grains or crushed grains are supplied to a twin-screw extruder and heat-treated under a pressure of 1-150kg/cm<2>, preferably 20-100kg/cm<2> at 70-150 deg.C, preferably 85-120 deg.C for 10-300sec, preferably 50-200sec. The treated grains are extruded under normal pressure and cut to proper length to obtain granules. The granular product is pressed with a press roll and expanded by heat-treatment. The expansion can be facilitated by adjusting the water- content of the pressed product to about 10-15% prior to heat-treatment. |
