PURPOSE:To provide the method for producing the gelatin processed food excellent in heat resistance, processability and texture. CONSTITUTION:The method for producing the gelatin processed food is characterized by adding or not adding a transglutaminase solution to a gelatin- containing molding raw solution, shaping the mixture, and subsequently immersing, coating or spraying the shaped product in or with a transglutaminase solution to cross-link the shaped product, thus providing the gelatin processed food having desired strength and texture. The combination of the immersion method of the transglutaminase with the mixture method permits the improvement in the processing process. The texture of the produced gelatin processed food can, if desired, be adjusted. |
