PURPOSE:To obtain a ginseng extract-containing beverage, containing a ginsenoside and good in flavor thereof without reducing active ingredients of the ginseng. CONSTITUTION:The ginseng extract-containing beverage is characterized by blending a beverage prepared by mixing a ginseng extract with other extracts, a fruit juice, sugars, various vitamins, amino acids, a sour agent, a perfume, water, etc., with 0.2-0.5 wt./vol.% pectin and regulating pH to >=3.9, preferably <=5.0. The objective method for producing the beverage is to mix respective raw materials such as the ginseng extract, other extracts, fruit juice, sugars, various vitamins, amino acids, sour agent and perfume, regulating the amount of a raw material containing an acid such as the fruit juice or sour agent within the range so as to afford pH >=3.9, preferably <=5.0 when the final beverage is prepared, blending the raw material, mixing the respective raw materials, then adding an adequate amount of water, providing a beverage stock solution, blending the resultant stock solution with pectin so as to provide 0.2-0.5wt./vo1.%, preferably 0.3-0.4wt./vol.% concentration when the final beverage is prepared, then diluting the blended beverage to the final concentration with water, thermally sterilizing the diluted beverage and subsequently filling the sterilized beverage in a desired container. |
