PURPOSE:To provide the production of lightly roasted bonito and tuna intended to address the unique fishy smell inherent in bonito and tuna and improve hygienic aspect. CONSTITUTION:The production method for lightly roasted bonito is made up of the following three consecutive processes: (1) the surface of frozen bonito is imparted with an alcohol such as a wine, (2) the resulting frozen bonito is put to vacuum packaging, and (3) the frozen bonito packaged is heated. |
