摘要 |
Sweetened red bean which is softened in a frozen condition is prepared by: (a) soaking the red bean in 0.01-0.2% complex phosphate solution, (b) first steaming at 100 deg.C for 40-50 min, (c) second steaming at 0.5-1% salt solution at 100 deg.C for 20-30 min, (d) first soaking in low concentrated sugar sorbitol solution, and (e) second soaking in high concentrated sugar sorbitol solution.
