PURPOSE:To obtain a soup stock based on KARASHI-MENTAIKO (cod roe pickled in mustard, salt and red pepper) for widely utilizing the KARASHI- MENTAIKO for cooking. CONSTITUTION:The objective soup stock is obtained by adding and mixing 20-40 pts.wt. soy sauce, 20-100 pts.wt. SAKE (Japanese rice wine), 0-450 pts.wt. water and a small amount of dogtooth with 100 pts.wt. KARASHI-MENTAIKO prepared by taking out only individual eggs from the ovary enclosure. |
