PURPOSE:To provide the subject apparatus for automatically producing a long- life unboiled noodle exhibiting a stable quality. CONSTITUTION:Unboiled noodle balls each accommodated in a bucket of a bucket conveyor 2 are conveyed in order into a dip tank 1 so as to be dipped while an organic acid for sterilization is supplies from an organic acid tank 3 to the bottom of the dip tank 1. In this case, the liquid temperature in the organic acid tank 3 is controlled by steam. Sampling is then carried out every a prescribed time from the unboiled noodle sterilized by a heat treatment unit 10 and its pH is measured by a pH analyzer 12. Based on its analytical result, a processor 15 controls the control value of each discharge amount of an organic acid feed pump 6 and an organic acid circulation pump 4 to the organic acid tank 3. In addition, steam supply to the organic acid tank 3 can be controlled by controlling opening and closing of a control valve 8 and the concentration of the organic acid in the dip tank 1 can automatically be controlled, thus automatically producing the objective long-life unboiled noodle sterilized and exhibiting a stable quality. |
