PURPOSE:To obtain a food preservative having excellent antimicrobial effects by addition or application to foods by deodorizing garlic and extracting essence of garlic. CONSTITUTION:Garlic is immersed in a treating solution containing ethanol to give an extracted solution of garlic. In order to remove an offensive smell, the extracted solution of garlic is mixed with 0.4-0.6% phytic acid based on the amount of garlic to deodorize garlic. The deodorized extracted solution of garlic is used alone or mixed with 1-100mug/ml epsilon-polylysine to give a food preservative. |
