Disclosed is a process for preparing a stabilized oil or fat powder consisting essentially of: (a) an oil or fat which is a triglyceride containing an unsaturated higher fatty acid having a tendency to degrade as a component thereof; and (b) wheat protein which is gliadin alone or in combination with glutenin in the form of gluten, wherein the amount of the oil or fat is 1 to 51 parts by weight per 100 parts by weight of the wheat protein and the oil or fat is included by the wheat protein or is at least partially coated with a film or particles of the wheat protein, and the process comprises: ¢I!(i) extracting gliadin in a solvent solution form from gluten using a hydrous alcohol solvent which is capable of dissolving gliadin but not glutenin, removing insoluble matters and adding the oil or fat to the resulting gliadin solution to form a mixture, or (ii) adding gluten and the oil or fat to a hydrous alcohol to form a mixture, wherein the alcohol in steps (i) and (ii) is a monohydric alcohol having one to three carbon atoms and the hydrous alcohol has an alcohol content of 20 to 80% by volume; ¢II! agitating the resulting mixture; ¢III! removing the solvent from the mixture; and ¢IV! drying the mixture to make the powder. The stabilized oil or fat powder is useful, for example, as a material of food or feed. |
