PURPOSE:To provide a strain, Torulaspora delbrueckii H299-18, with its chromosome DNA giving an electrophoretic pattern differing from that for Torulaspora delbrueckii (standard culture strain for Saccharomyces rouxii), having optimal viable temperature toward lower temperature side, highly resistant to freeze, thus preservable in a frozen state for a long period of time and capable of bread making using frozen dough. CONSTITUTION:Water is sprinkled on a stack of apples harvested at Hirosaki District, Aomori Prefecture, Japan, and the resultant washings are collected in a tank and decanted overnight; the supernatant developed is discarded and the remaining residue is inoculated upon a liquid medium to proliferate the yeast contained in the residue, and the yeast thus proliferated is monocolonized in an agar medium, thus obtaining the objective strain having the above- mentioned characteristics or advantages. For the strain of the present invention, even when used in producing frozen dough for lean bread such as a slice of bread, the hot-drying time after thawing is unaffected irrespective of the length of prefermentation time. |
