The system includes an ultrasonic measuring head (38) which is placed with a water-filled cushion (40) in contact with the carcase near its back mid-line (20) at the level of the penultimate and antepenultimate ribs (13). A pulse of about 110 volts sends an ultrasonic wave into the layer of fat (11) overlying the muscular layer (12). The echo is processed by spatial and spectral filters with scaling functions, segmentation or similar methods and an electronic computer with a mathematical model of the object under investigation. USE/ADVANTAGE - For classification of carcases of pork, more accurate measurement is possible with increased pulse amplitude giving a sharper image esp. at the boundaries.
