Two continuous bands of suitable edible pastes are extruded onto conveyor belt. Lower band is off-white in colour and forms most of the body, while upper band is blackish, narrower in width and represents the back, being reduced in both marginal zones to simulate the profile provided by the head and tail of the baby eel. Within lower band a cord of blackish paste is incorporated near the head margin, to simulate the eyes of the eels. The two bands and cord are supplied by extruders feeding nozzle with 3 outlets. The continuous band obtained is finally cut transversely. |
