PURPOSE:To produce mayonnaise suppressing rise in cholesterol in blood, namely absorption of cholesterol. CONSTITUTION:In production of mayonnaise having oil-in-water type emulsion texture comprising fats and oils, an acidulant, cholesterol-containing whole egg and/or yolk, necessary seasoning and additives, fats and oils containing a rice bran component are used to produce mayonnaise capable of extremely controlling rise in cholesterol in blood. |
