PURPOSE:To obtain a new KOJI mold capable of producing SAKE (Japanese rice wine) with a low phytin content and a high inositol content due to its ability to produce a larger amount of phytase than that of conventional KOJI mold by its use for producing the SAKE. CONSTITUTION:The objective highly active KOJI mold, e.g. PHA2-4-3 strain (FERM P-13062). This KOJI mold is obtained by subjecting a KOJI mold to mutation treatment with nitrosoguanidine, etc., and then selecting the objective 2-deoxyglucose-resistant strain from the mutant strain. Specifically, the mutant strain is preferably cultured in a culture medium containing the 2-deoxyglucose, inoculating the resultant spore of the KOJI mold having high resistance to the 2-deoxyglucose into a PS culture medium containing calcium phytate, forming a halo and further selecting a strain having the large halo. |
