PURPOSE:To obtain UDON (noodle) having transparent feeling, excellent in taste and texture, further having proper nutritive value, optimum as a healthy food and requiring no time in boiling up. CONSTITUTION:The UDON (noodle) comprises wheat flour, starch, cow milk and hot water. This noodle is produced by mixing wheat flour with starch, adding mixed solution of cow milk and hot water thereto, carrying out mixing of these components and then processing the mixture into noodle sheet, aging the noodle sheet and preparing the sheet into noodle. |
