PURPOSE:To prepare broth granules which give clear broth free of impurities, by crushing dried bonito, mixing with water, extruding through a high pressure extruder, forming to granules having specific size, and drying and solidifying the granules. CONSTITUTION:Dried bonito, dried small sardines, etc. are further dried in a drier 2, and crushed to fine powders with a cursher 3. The powders are sieved with a sieve 4, and the raw material finer than 80 mesh is charged into a mixer and mixed with water. The paste having a desired viscosity is fed to a high-pressure extruder 6, and extruded to granules of 1-3mm diameter and 1.5-3mm L. The granules are dried with a drier 7 to a water content of <=8%. |
