Machine has: a feeder device (4) for the meat which is to be treated, supported by a housing (1), a traction roller (2) with teeth (8) which are at an angle to the direction of rotation, a knife (3) which is tangential to the roller and which faces in the opposite direction to the direction of transport of the meat, a beam (5) which supports the knife, and a clamp (6) which secures the knife to the beam. The beam and the clamp, which make up the knife holder (9) have at least one curved section which extends perpendicular to the direction of transport. USE/ADVANTAGE - Used for removing skin, rind, etc. from meat. The shape of knife is more similar to that of the meat, and hence the skinning operation is more effective. There is less risk of removing too great a thickness, perhaps including some of the meat itself, near the centre of the knife.
