PURPOSE:To provide a method for producing a docosahexaenoic acid-enriched fish food free from fish odor and excellent in flavor. CONSTITUTION:This method comprises separating edible parts and the head part from the fish body, subsequently extracting its orbit oil contained in the neighborhood of the eyeballs of the head part and containing docosahexaenoic acid in an amount of >=15wt.% with hot water and deodorizing it to produce purified fish oil and further, adding the resultant purified fish oil to a fresh fish meat. |
