PURPOSE:To provide the subject enzyme enabling glucose to be economically isomerized into fructose under reduced burden on ion exchange resin using glucoisomerase-contg. microbes without the need for addition of an inorganic magnesium salt, etc., as activator. CONSTITUTION:Glucoisomerase-contg. microbes containing glucose isomerase activating factor in the form of its binding to cells can be obtained by aerobically culturing at 30 deg.C for 1-3 days Streptomyces sp. (FERM BP-3584) separated from the soil to produce and accumulate glucose isomerase in microbes followed by gathering the resultant microbes from the cultured product through e.g. centrifugation. In the above culture, it is preferable that a corn steep liquor be used as nitrogen source. |
