PURPOSE:To provide the composition which contains the wire components other than alcohol and keeps the color tone and fragrance by mixing cyclodextrin and maltodextrin with concentrated wine essence and drying the mixture. CONSTITUTION:The objective composition is obtained by combining (A) the wine essence prepared by concentration with (B) cyclodextrin and/or (C) maltodextrin and drying the mixture, preferably through the spray drying using a spray drier. The component A is preferably prepared by concentrating wine under reduced pressure using a rotary evaporator and has more than 10% solid content. As a component B, is preferred beta-cyclodextrin because its single use shows excellent pulverization ability and gives high-concentration wine essence powder. |
