<p>A method and apparatus for removing cheek meat from the head of an animal carcass. The apparatus comprises a clamp (10) for clamping the head in a stable position; cutting knives (21) for applying a cut in the cheek meat of the head and claws (13) which are engageable with the cheek meat after it has been cut and movable toapply a pulling force to the cheek meat. According to the method the pulling force is in a direction from the back of the lower jaw toward the nose.</p> |
