Mustard prod for seasoning human consumables comprise known mustard ingredients eg mustard flour, vinegar, sugar, fruit, seasoning salt, water and a spice mixt comprising paprika, coriander, pimento, nutmeg, cardamon, tarragon, lovage and fresh horseradish. The mustard pref contains 0.1-1.5 wt% (wrt final prod) spice mixt contg equal amts of spice components. The spice mixt is pref added to the mustard base mixt in a two-part process, pref as equal amts at the grinding and mixing stages. ADVANTAGE - The mustard contains no stabilisers and is suitable for large-scale prodn. |
