<p>PURPOSE:To produce new liqueur having a color and flavor of TANEGASHIMA MURASAKI, one variety of sweet potato or MURASAKI sweet potato, its improved variety. CONSTITUTION:TANEGASHIMA MURASAKI, one variety of sweet potato, or MURASAKI sweet potato, its improved variety is steamed or baked, ground, immersed in SHOUCHU (a distilled spirit) or an alcohol solution, adjusted to pH 4 or lower to make color tone of eluted solution is made red to reddish purple. Starch contained in the residue after the filtration is saccharified with an enzyme agent and used. The eluted solution and the saccharified solution are mixed with water and optionally blended with a saccharide and an organic acid, subjected to an organoleptic test and a blending ratio is fixed to give a product.</p> |
