The method, and the device for its implementation, apply more particularly to cooling a biological body (1) until it freezes, in particular in cryosurgery. The state of freezing of the biological body (1) is evaluated by the measurement of the reflection and/or the transmission of a light beam injected into this body. The beam, emitted by a light source (5), is propagated by an optical fibre (4) whose end is implanted in the body (1), in particular by means of a needle (6). A reception optical fibre (7), also implanted in this body, picks up the reflected or transmitted fraction of the beam, and directs it towards reception means (8) which convert this fraction into the form of an electrical signal. On the basis of the processing of this signal, the state of freezing is indicated by a display (14) and an audible alarm (15).

|
