PURPOSE:To obtain a lipase having high resistance to organic solvents and high site specificity at the 1- and 3-positions of an acylglycerol. CONSTITUTION:The objective new lipase having the following properties: (1) action: acting on an acylglycerol, specifically hydrolyzing the 1- and 3-positions and producing a fatty acid; (2) substrate specificity: specifically acting on the 1- and 3-positions using a triacylglycerol, a diacylglycerol and a 1- monoacyglycerol as a substrate; (3) optimum pH: 5.0-6.5; (4) stable pH range: 4.0-10.0 and (5) molecular weight: about 31,000 [measured by the sodium dodecyl sulfate-polyacrylamide gel electrophoresis (SDS-PAGE) method]. Furthermore, the objective method for producing this new lipase is characterized by culturing a strain, belonging to the genus Fusarium and having the ability to produce the new lipase in a nutrient culture medium and collecting the new lipase from the resultant culture. |
