PURPOSE:To provide the spice having a higher quality than those of conventional spices by utilizing a basidiomycete having a high ability for the production of a spice ingredient. CONSTITUTION:The spice for beverages and foods contains the cultured product of a basidiomycete which belongs to the Aphyllophorales, TAKOKIN (a family), Polyporus tuberaster and which has an ability to produce at least one of aromatic volatile ingredients consisting of benzaldehyde, benzyl alcohol and 2- phenylethanol. The spice can give a new good flavor to beverages and foods. |
